MORE ABOUT THIS COFFEE

ABOUT THE WASHING STATION

Faysel Abdosh founded the Ayla washing station in 2018 and named it after his niece. His company, Testi Specialty Coffee, runs several stations in Guji; Ayla is its first in Sidamo. Around 800 farmers deliver cherries to the station. They grow coffee at 1,950 to 2,000 metres above sea level, on small plots averaging about 0.5 hectares.

Besides buying cherries, Testi Specialty Coffee supports the local community. In Sidamo it has helped build schools for local children, supported a project to improve access to drinking water and helped connect homes to the electricity grid.

Farmers hand-pick ripe red cherries and bring them to Ayla. Because the farms are small, most of the work is done by the family. At the station the cherries are inspected and damaged or unripe ones are removed. The cherries are pulped and fermented in a tank for 36 to 48 hours. After fermentation the parchment is washed with clean water and spread out to dry on raised beds, where it is raked often so it dries evenly.
